Wake Up Muffin

There's nothing better than a wholesome but delicious muffin that's not too sweet and not too dry.  Mashed bananas, espresso powder and dark chocolate combination sets this muffin apart from the rest.  I just put in one packet of espresso but for my taste it could have had another packet.  Anyone who knows me, knows I've either got a cup of coffee in my hand, going to get coffee or thinking about when I can get some coffee.  Add just one packet if you want the coffee flavor to be subtle or add two for it to be more prominent.  The secret to this muffin is the whole wheat flour and nonfat greek yogurt. 


Wake Me Up Muffin Recipe
Makes 12 muffins



Ingredients:
1 1/2 cups whole wheat flour
1 or 2 packets mocha flavored Starbucks Via (depending on your taste)
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups ripe bananas, mashed
1/2 cup granulated sugar
1/2 cup light brown sugar, firmly packed
8 tbsp. unsalted butter, melted
1/4 cup milk
1 large egg
1/3 cup non-fat Greek yogurt
1 cup chopped dark chocolate

Directions:
Preheat the oven to 350 degrees F.  Line a 12-cup muffin pan with paper liners or use a cupcake pan with jumbo muffin liners.  In a small mixing bowl, combine the flour, espresso powder, baking soda and salt.  Stir together and set aside.  In the bowl of an electric mixer combine the mashed bananas, sugar, brown sugar, butter, milk, egg and yogurt.  Mix on medium speed until well combined.  Add the dry ingredients to the wet ingredients and mix on low speed just until incorporated.  Gently fold in the chocolate with a rubber spatula.

Divide the batter evenly between the prepared muffin cups.  Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.  Let cool in the pan for 10 minutes, then transfer the muffins to a wire rack and allow to cool completely.

    I could not agree with you more on the baking theory for relaxation. I was the baker at work in a former position. Everyone would ask 'why are you baking in the summer?' I'd tell them, "It's like Calgon, it takes me away."
